10 Best Master's Programs in Food Science and Technology – Master's Programs Guide

A Master of Science in Food Science is a graduate degree that prepares people to work in various aspects of food production and development. As a Master of Science, the program takes an in-depth, multidisciplinary approach to give students a deeper understanding of food safety and science.

What is an MSc in Food Science? This degree focuses on health, food quality and safety, and food production. Degree candidates learn about every step of production, from growing or harvesting to cooking and consuming. The degree pulls from a wide range of disciplines including chemistry, biology, nutrition, and chemical engineering. Students learn about the properties that give food its flavor and health benefits, the processes commonly used in food production, and various methods of improving food quality or safety.

An advanced degree in food science can be valuable because of the increasing public focus on producing food sustainably and consuming only healthy food. Candidates with a Master of Science in this discipline are uniquely equipped to take on jobs focusing on healthy or eco-friendly food production.

The cost of earning a Master of Science can be considerably different from one region and institution to the next. Prospective students should carefully research the different programs to identify one with manageable expenses.

People who have studied food science may work in food production, product development, or quality control. Specific jobs include improving growth or production processes, developing new foods, and preventing contamination or other food safety issues. Food scientists may work for employers ranging from large corporations to government agencies.

10 Best Master's Programs in Food Science and Technology – Master's Programs Guide

Food Science and Engineering (Master’s)

From raw materials to safe food

This research-intensive Master’s program conveys expertise in modern food processing. The focus is on the links between complex food matrices and technological processes to develop and produce nutritious, safe, and non-perishable food and nutrient recipes. We prepare our students to transfer basic research into new technological processes. They learn how to develop innovative technologies that are transformed into product-specific, automated production processes.

Degree program content

In the first year of studies,
the focus is on combining approaches from soft matter science with microbiological knowledge and engineering methods in order to understand all aspects of processing complex food matrices. You will analyze food processing methods and become familiar with new technologies used to effectively produce functional compounds from plant and animal raw materials, modify them at the enzyme level, or stabilize them with encapsulation.
At the same time, you will learn scientific methodological skills. This includes modern chemical, physical, molecular, and statistical methods but also methods for modelling and simulating these processes and the resulting reactions. In lab courses, you will apply your knowledge. In seminars, you will examine food production in natural science, engineering, and business contexts.

In the second year of studies,
you can design your program according to your individual interests and desired area of specialization. You will continue to expand the knowledge you gained in your first year of studies and your practical skills by specializing in a sub-field of food science. Possibilities include, for example, meat, milk, cereal, fruit, food microbiology, or process engineering. You will also increasingly be introduced to conducting independent research.
The open structure of the second year of studies also allows you to spend a semester abroad at one of our outstanding partner universities or to complete an extended internship at a national or international research institution in the food industry. A project assignment at the Institute of Food Science and Biotechnology will introduce you to our current research projects.

A research-intensive Master’s thesis
with a department of your choice is imbedded in the ongoing research work at the Institute of Food Science and Biotechnology and enables you to demonstrate your ability to carry out independent research work.
